Most likely we will be sticking with the table based templates in the immediate future.
Tables are going to be required for certain parts of FlexCMS no matter what, such as the calendar, the forum, and so on, so you can't really expect to eliminate all the tables from it.
If you would like to remove just the ones from the template, that's quite possible, and some users have had good success creating XHTML/CSS templates for FlexCMS.
