In the control panel under "edit profile", there are some fields that are bold (required fields) Is there an easy way to make certain fields like (Real name) always displayed in the "user information" also is there a way to make the Email always show up in the "user information" block rather than allowing user to choose display or not to display.

Unfortunately there isn't any easy way to change what's displayed on the user profile page. You can control what fields the user sees and must complete on registration under the "Modify Registration Form Fields" section.
